Personally, my two favorite eras of warfare were the two World Wars simply because I love the concept of combined arms tactics such as the German Blitzkriegs that overtook France, Poland and much of the USSR and the bitter trench fighting of the First World War. The Eastern Front in both conflicts interest me to no end in the political decisions and ideologies behind both sides as well as the combat that took place such as the Battle of Tannenburg and the Siege of Przemyśl of WWI and the Battles of Moscow, Kursk and Operation Bagration of WWII. They were amazing in terms of scale to the point that it seemed almost fictional on how such battles could be conducted on such enormous scales.

I personally find Modern Warfare to be the least intriguing as it all revolves around bombing out of enemies and counter insurgency for the most part.

I'm also quite an avid fan of Ottoman expansion era, the Napoleonic Wars and those conducted across the European continent throughout the 17 and 1800s.

I'd like to learn about the Hundred-Year Wars between Britain and France, despite trying to feel the urges to learn more about the Byzantine Empire in general.
